Today was a bit of an emotional roller coaster. Because of this I decided the perfect way to end the night would be with this two ingredient fudge. Of course since I am new to baking/making desserts I did not have either of the two ingredients. I had to make my own icing and use bakers chocolate. Since I was over the ingredient title I figured why not throw in some peanut butter. I CANNOT wait for it to finish setting!
Today I also found out I will be baking my first gender cake. I have several pregnant friends right now, one of which was part of my emotional day, and another who will be finding out the sex of her baby on April 4th. When she finds out the sex I will be baking either a pink or blue cake, covering it in icing, and taking it to work the next day for our team to cut into and find out what she is having!! I love this idea and am super excited to be a part of it!

Cupcake fun
Last night I took it upon myself to make these cupcakes. In case you do not know me, I do not bake. Cooking I love, but baking is a rare occurrence. First I mixed the cake batter, then sectioned into bowls, and colored.

Then I layered the batter into the cupcake liners as best I could.

The biggest bummer of this project was that I found out I only have ONE cupcake pan. This meant in between each round I had to refrigerate the batter and then stir it up again to make it warm and able to layer.

This is what they looked like after baking. The inside was even better...

But the best part, was that this little girl had fun cupcakes to share with her friends today.

I took the extras to work with me, and have actually been informed I am making them for a friends wedding in July. You can bet I will be getting more pans before then!

Ready or not...
Another week is here. Yesterday our sitter was not feeling well so I worked from home with Sydney. We were able to run into the office for some folders I needed to review. While we were there we picked up our new to us camera. It is a DSLR type camera that apparently I know nothing about yet. In my learning attempt I took 455 pictures yesterday. This is my current favorite picture...

Last night Sydney started coughing in her sleep, which meant no one got much sleep. We are hoping for some rest for all of us tonight and the sweet girl to feel better.
Tonight we had a yummy new dinner from Full Bellies, Happy Kids. It was the Italian Sausage, Peppers, and Potatoes. It was quick and really easy. We have been big fans of the recipes we have tried from here. The flavors are good, they are really quick and easy, and kid friendly!
After laundry, dishes, playing, dinner, and us getting Sydney settled for bed I was able to get back to work. I am really looking forward to April first when our accounting system will be down and I will get a mini break from work. The best part is I will get to spend even more time with this sweet girl

Girls' nights!
Steve (the wonderful husband) is broadcasting some of the high school state championship games this week. While he is away Sydney (the amazing daughter)and I have been taking full advantage of some girl time. This morning we even went out to breakfast. On a Thursday. Before work. I can't believe it myself but it was so great. I cannot think of a better way to start the day than sitting down and enjoying time with loved ones. Not to mention Sydney loved the pancakes, and we had leftovers so that took care of dinner. In the evenings we have been checking out the new episodes of the Fresh Beats, working on Your Baby Can Read, and making sure we laugh...a lot.
Tonight we did have to clean up the apartment and get ready for Steve's return. I was able to get the prep work done for tomorrow nights dinner. We will be having a variation of Pioneer Woman's white chicken enchiladas. If you are wondering "who is this Pioneer Woman?" you must google her. Even if you do not cook. She shows you step by step instructions for every detail. You can make them too.
Then the night got really interesting when we had some severe weather. Like break in to Nick Jr with a black screen and telling people in my town to seek shelter kind of severe. I grabbed a blanket, Sydney, and called my parents. We ended up waiting it out in the bathroom. Thankfully everything turned out fine. Needless to say after all of this, I am one worn out momma!
